When West meets East At AnCasa Hotel & Spa Kuala Lumpur


This is my first attempt to write a blog in English and I’m not very fluent in speak and writing. But for me this is not an obstacle for stop me from writing. Will always remember “do not give up, the beginning is always the hardest”.



Grilled or barbecued chicken wings is very popular in Malaysia. Everyone loves chicken wings. It’s also one of my favorite foods. In almost any hawker centers or food courts, you can see a stall selling nothing but grilled chicken wings. And they are so yummy.


What is hickory smoked? Definition of Hickory Smoked in cooking refers to foods that have been cooked and smoked in the enclosed chamber of a barbecue that is filled with smoke from the burning of hickory logs. The smoke from the burning wood permeates the food giving it a hickory flavor.

The key to smoking any type of meat is “low and slow”.  This is especially true with chicken wings since it isn’t a thick cut of meat and the wings can become dried out quickly.  Using the smoker adds so much natural flavor and keeps the meat nice and juicy that traditional wing sauces aren’t even necessary.  That definitely saves on the amount of calories consumed and also the amount of napkins needed.


1 tablespoon cumin
1 tablespoon paprika
1 tablespoon granulated garlic
1 tablespoon granulated onion
1 tablespoon chili powder
1 tablespoon brown sugar
2 tablespoons kosher salt
1 teaspoon cayenne pepper
1 teaspoon black pepper
1 teaspoon white pepper

The recipe for the dry rub combines a variety of blends of spices which can be adapted to your individual preference. Add more cayenne pepper for additional heat, or add more smoke paprika for more of a barbecue flavor. The possibilities are endless – and they all let you smoke chicken wings perfectly!
